Slow roasted tomato bruschetta with basil pangritata

I made and photographed these last weekend, and almost ate the whole batch. No shit. Matt was over at a friend's house watching the cricket, and I messaged him a photo. By the time he rushed home for a piece, I'd eaten them all.

May have had something to do with the fact that I'd skipped lunch... maybe.

But they are really tasty. Slow roasted tomatoes with balsamic and basil, piled onto barbequed bread, smeared with roasted garlic, and a punchy basil 'pangritata' sprinkle to boot. What more do you need as a snack food before a special meal (or a meal for a gluttonous one who hasn't had lunch and has spent all afternoon with the smell of roasted tomatoes wafting through the kitchen!). 

These do take a little forward planning, as the tomatoes take an hour or two to roast down. But what you're left with is a concentrated, sweet, and tangy tomato with four times the flavour of a fresh one. Roast the tomatoes a day or more before, and the rest comes together in just a few minutes.

These make a perfect starter for your Christmas table, or something special as a snack when friends come over.

Makes 10 - 15 toasts

Enough for 6-10 people as a starter
