Thick and creamy coconut yogurt
Thick, creamy, greek-style coconut yogurt, which is impossibly simple to make. No heating, no thermometers, this one is so easy!
I tried every method for making coconut yogurt out there - probiotic capsules, thickening with agar agar, cornstarch, arrowroot, heating, no heating... And none of them worked properly.
I finally gave up and started buying the yogurt again, and at $10 a jar, that started to hurt. On a whim one day, I tried simply adding coconut cream to the bottom of a jar of store-bought coconut yogurt. Low and behold, it worked! No complicated methods, just purely adding new coconut cream to old yogurt.
The trick here is to use UHT coconut cream. It is already slightly thicker than the usual canned varieties, and doesn't separate. Yes, this means you're getting a product with stabilisers in it, but honestly, this is the only method which has worked for me. I've tried using this method with canned coconut cream, but it separates over time. This is fine if you're after a runnier yogurt, but for thick greek-style, the UHT wins every time.
