You know that smell when you sautee crushed garlic in a pool of butter?

Right there.

That is what makes me happy.

This blog is my way of continuing that inspiration.

Melt-In-Your-Mouth Lavender Shortbread

Spring weather makes me think flowers, garden, and tea. Why not combine all three?

I stole a couple of sprigs of lavender from my neighbour's hedge (don't tell them!) and knocked up these cookies in an hour, just in time to catch the last of the afternoon sun with a cup of tea on our balcony.

I know what you're thinking. Don't worry about the lavender. These cookies balance the softness of a classic butter cookie with slightly floral, herbaceous notes.

Melt-In-Your-Mouth Lavender Shortbread

  • 225g butter, softened
  • 1/4c cornflour
  • 1/2c icing sugar
  • 1 1/2c all purpose flour
  • 2T lavender flowers, chopped finely

Using an electric mixer, beat the butter, cornflour and icing sugar until smooth. Add the flour half a cup at a time, and finally the lavender flowers. Stir to combine.

Roll the dough into walnut sized balls, and flatten slightly with a fork.

Bake for 12-15mins in a 190 C oven, being careful the edges don't brown too much.

Cool on wire racks while you brew a cup of tea.
